Home Made 'Claypot' Chicken Rice

Ingredients (serves 2)

1) Chicken breast
2) Dark soy sauce
3) Light soy sauce
4) A little salt
5) 1 medium shitake mushroom (dried)
6) 1 pot of rice
7) Cooking oil

First slice the chicken breast into a few thin slices. And then marinate with intems 2, 3 & 4. Marinate for at least 1/2 hour.

In a clay pot, (I use normal pot) rinse rice and boil for 8 - 10 minutes. And then, add the marinated chicken on top of the boiling ( half cooked) rice, and place the shitake mushroom too. Remember, do not stir! Cover up for 3 minutes. And then, add the eggs ontop of everything. Cover up for another minute. And ready to serve. Try it! And enjoy your home cooking!

Lunch at home

So this is our lunch recently... I call this one as BELACAN BILIS TERUNG The ingredients are:- ~4 x medium size terung panjang
~Belacan Sabah about 2 cm
~Bawang merah
~Bilis about 100gm
~Cili JB yg merah 3
~Air asam jawa

METHOD

Mula2 bakar tu terung sampai angus sikit2... ataupun sampai lembek... and then cover up supaya angin nda masuk.. dan lepas tu senang mau buka kulit dia. Bila suda buka kulit, then kasi potong keci2 lah. Meanwhile, goreng tu bilis sampai garing then add bawang, belacan & cili. Bila semua suda sebati, kasi masuk tu air asam jawa... stir for awhile.. then kasi masuk semua tu terung yg sudak kana potong itu. Next, add some salt & msg. When all the gravy suda serap dalap terung, then ok sudah lai tu... boleh serve sudah!


Second dish of the day pula... SELAR KUNING MASAK TAUCHU The ingredients are:-
~ 3 ekor ikan selar nda kici nda basar
~Halia potong mcm size macis
~bawang putih 2 -3 ulas cincang
~2 tbl spn of kacang tauchu (yg sedia dalam botol punya)

METHOD

Potong ikan into 2 supaya senang serap kuah. Mula2 on a hot oil... goreng tu ikan mcm biasa. Bila suda garing keep aside. Next reduce the oil, then toss the halia & bawang putih... bila suda kekuningan... add the tauchu... stir lagi... then tambah sikit air... sudah mendidih, taruh pula ikan goreng tadi dan stir lagi... lepas tu boleh lah serve.....

Amacam? Sadap dan mudah kan?

New Year Pusas

As promised... this is the recipe of our favourite pusas*...

The main ingredients are:- bilis (anchovies- dried type).. about 400g ~ washed







3 x medium size of US potatos ~ peeled ~ sliced (into double size of each bilis.)







And of course.. a couple cloves of shallots and garlic.. punched








And also.. for the heatness... some ginger ~ washed & diced.. some chilli ~ de-seed and chopped... very small





PLUS: some msg, salt, a little sugar & dark soy sauce

The method


First of all... deep fry all the sliced potato... when done.. keep aside for later assemble...

Next.. reduce the oil from the fry pan.. (re-use the oil for frying the potato..do not dump)... and add the heatness... ginger & chilli.. fry for awhile.. and add the shallots and garlic... next toss all the bilis... stir fry until bilis become crisp...

Next add the fried potato (earlier).. and assemble altogether... at this stage.. add the msg & salt to suite your taste... then add the dark soy sauce... and stir again till the dark colour balanced... for finishing touch... sprinkle some sugar... give it a final stir.. and serve lah!


*pusas is a companion snack while drinking alchohol...

My First Cheese Cake

Simplest ingredients (can be bought almost everywhere):
1) 300gm Cream Cheese
2)3 whole eggs
3)100gm sugar
4)Yogurt (Mango Flavour)
5)3 Table spoon of wheat flour
6) Some biscuit (for the base) (optional)

METHOD

Mixed all the ingredients with a blender or a mixer. Pre-heat oven to 150°C. And simply bake all the mixture for 35minutes. Cover the mixture with an alum foil at the 20th minute to prevent burnt on the surface of the cake. When done, leave cake to cool down a bit and store in the refridgerator for few hours before serving it.
Here it is! Although it may not look classy but it's as delicious!

Nasi Goreng 'sunshine'

Sunday morning 'brunch'.


INGREDIENTS
-Carrot
-Jagung
-Bawang merah
-Bilis
-Udang Karing
-Telur

Serve while hot with chilli or tomato ketchup. As for me, I took it with some small chilli + lime + soy sauce and a cup of fragrant Tenom black coffee.
